german spiced vinegar with walnuts

Ingredients

  • 60 walnuts
  • 1/2 ounce of mace
  • some cloves (or garlic)
  • ginger
  • 1 ounce of mustard seed
  • pinch of whole white pepper
  • a piece of grated horseradish
  • handful salt
  • 6-8 bay leaves
  • 1 quart good wine vinegar

Preparation

Step 1

Cover the kernals of 60 sound walnuts with hot water for a few minutes, rub with a cloth to hull them, when they are dry pack them into layers in a stone jar with the following spices which have all been ground together
Mace, cloves (or garlic), ginger, mustard seed, whole white pepper, grated horseradish, salt.
Add the quart of vinegar well boiled.
after the mixture has cooled, cover the jar and set outside for 2-3 weeks
The extract can then be filled into jars that are well corked
The spices retain enough flavor for a second use
two tbsp of this is well added to stew to feed 6 people.
