Black Beans & Pork

Ingredients

  • 1 1/2 lbs. boneless pork loin, trimmed & cubed
  • 1 tsp. chili powder
  • 1/2 tsp. ground coriander
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 onion chopped
  • 2 cans (15 oz. each) black beans, drained & rinsed
  • 1 can (14.5 oz.) diced tomatoes with green chilies
  • 1/2 tsp. dried cilantro
  • 3 cups cooked white rice

Step 1

In slow cooker, toss together, pork, chili powder, coriander, salt & pepper. Stir in onion, beans, tomatoes & 1 1/4 cups water. Cover & cook on low for 6 hours.

Stir in cilantro. Mash bean slightly until mixture is thickened. Serve over rice if desired.
