Ingredients

  • 10 oz. pkg frozen chopped spinach
  • 1 c. grated carrots
  • 1/2 c. chopped onion
  • 24 oz. jar basil and tomato spaghetti sauce
  • 1/2 c. white wine
  • 2 tsp. dried basil leaves
  • 1/4 tsp EACH garlic powder, red pepper & black Pepper
  • 8 oz. lasagna noodles, uncooked, break to fit pan
  • 15 oz. low fat ricotta
  • 2 small zucchini, sliced
  • 1 c. low fat shredded mozzarella cheese

Step 1

Cook spinach according to package directions, drain well.
Combine carrots and onion in 3 qt. glass casserole. Cover with vented plastic wrap. Microwave on high six min.
Add spaghetti sauce, wine, basil, garlic powder, red pepper and black pepper.
Recover and microwave on high seven minutes.
Spread ricotta cheese on all eight lasagna noodles.
When sauce is hot, pour one third into 3 qt. rectangular dish.
Arrange four noodles on top. Distribute half of spinach, half of
zucchini and half of mozzarella over top.
Pour half of remaining sauce on top and repeat layer, using remaining ingredients.
Cover with vented, heavy duty plastic wrap. Microwave on high
seven minutes. Rotate dish and microwave on medium high(70%) 18 to 20 min.
Let stand 20 minutes before serving.
