El Pacifico Omelet

Ingredients

  • 6 oz cream cheese, softened
  • 2 TBL sour cream
  • 1 1/2 tsp fresh lemon juice
  • 1/8 tsp pepper
  • 2 tsp canola oil
  • 3 eggs, beaten
  • 2/3 C thinly sliced scallions
  • 4 oz thinly sliced smoked salmon, room temp

Preparation

Step 1

in sm saucepan, whisk cream cheese, sour cream, 1 1/2 tsp dill, lemon juice & white pepper
heat over med-low whisking constantly, until warmed through
remove from heat

in med skillet, heat oil over med
add eggs
stir w spatula, scraping bottom of pan, until eggs are almost set 1 min
reduce heat to low
spread eggs evenly over skillet
place scallions, 1/3 C of the cream cheese mixture & salmon over half the omelet
when bottom is set, fold omelet over
slide onto plate
serve w/ remaining cream cheese mixture
sprinkle with dill
