Ingredients
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon paprika
- Dash of cayenne pepper
- 2 eggs
- 2 tablespoons (or enough for your taste) red wine vinegar
- 2 cups salad oil
- 2 tablespoons lemon juice, fresh if available
- 1 tablespoon hot water
Preparation
Step 1
Mix dry ingredients and set aside.
Blend eggs, then add dry ingredients and beat.
SLOWLY add oil to egg mixture and continue beating until thickened.
Continue beating and slowly add lemon juice
Heat vinegar and add very slowly to mayonnaise (this helps to "set" the mayonnaise)
Beat in hot water as this takes away oil appearance
makes about 2 cups
