Bananas Foster French Toast

Ingredients

  • 4 large eggs
  • 1 C. heavy cream
  • 1 tsp. cinnamon
  • 8 TB. butter, dividee
  • 8 large croissants halved
  • 1/2 C. dark corn syrup
  • 1/2 C. brown sugar
  • 1 C. maple syrup
  • 1 C. chopped pecans
  • 6 ripe bananas, halved lenghwise
  • 1 tsp. rum or rum extrac

Preparation

Step 1

In a shallow dish, whisk together eggs, cream, cinnamon

In a large skillet, melt 2 tsp over med. heat. Dip 4 croissant halves in eggs to coat both sides. Using a fork, remove croissant halves in hot skillet. Cook 2 mnutes per side or until lightly browned. Repeat procedure with remaining butter and croissant halves. set aside and keep warm.

In a large skillet, combine corn syrup, brown sugar, maple syrup and pecans. Bring to a boil over med. heat. Reduce heat, and simmer for 2 minutes . Add banana halves and rum. Coat with the syrup mixture. Spoon over french toast.
