Scalloped Potatoes

  • 1 tbsp. vegetable oil
  • 1 onion, thinly slices rings
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup milk
  • 1 cup chicken broth
  • 4 potatoes, pared and thinly slices
  • 1 tbsp. parsley



Step 1

PREHEAT oven to 350
HEAT oil in a pan and saute onions until tender and browned
IN saucepan, melt butter. Add flour, salt and pepper and cook for 1 minute
ADD Milk and broth slowly. Cook until thick and bubbly
ARRANGE sliced potatoes in a lightly greased baking dish. Top with onions
POUR sauce evenly over potatoes and onions.
BAKE covered for 1 hour. Uncover, and bake an additional 10 minutes.
