Southern Shrimp Chowder

Ingredients
- 1/4 lb salt pork diced
- 1 med onion finely chopped
- 1/2 cup green pepper diced
- 3 cups boiling water
- 2 cups potatoes, peeled and diced
- 1 bay leaf
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 dashes tobasco sauce
- 1 1/2 lbs shrimp cooked and shelled
- 3 tbsp parsley

Step 1
In medium sauce pan fry the salt pork until crisp, about 8 minutes over medium heat. Add the onion and green pepper and saute until tender about 10 minutes. Pour in the boiling water. Add the potatoes, tomatoes, bay leaf, salt, pepper and tabasco. Bring slowly to a boil, then turn the heat to low and simmer for about 15 mibutes oir until the potatoes are tender but not mushy.
Add the shrimp and parsley and continue cooking for 3 to 4 minutes. Remove the bay leaf and discard.
