Ingredients
- 6 baking potatoes
- 4 T butter
- 4 T sour cream
- 1/4 c scallions
- 1/4 c bacon (cooked & crumbled)
- 1/2 c cheddar cheese

Step 1
Heat oven to 350 degrees. Bake potatoes for 1 hour. Let cool. Cut 1/3 off potato lengthwise, remove flesh leaving 1/4 inch shell. In bowl mash potato flesh and next 4 ingredients and 1/2 c cheese. Season with salt and divide evenly into the shells. Place filled potatoes on baking sheet and bake 15 minuts or until heated through. Top with remaining cheese during last minute.
