Honey Cake

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup less 1 tbsp. oil
  • 3/4 cup honey
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. cocoa
  • 1 1/2 tsp instant coffee dissolved in 1 cup boiling water

Preparation

Step 1

1. Preheat oven to 350 degrees.
2. In a large mixer bowl, beat eggs and sugar until light and fluffy. Add oil and honey: beat well.
3. In a separate bowl combine all dry ingredients. Reduce mixer speed, alternate adding dry ingredients and coffee.
4. Pour into well greased bunt pan and bake for 50 minutes. Let cool for 1 hour and remove from pan.
