Asparagus-Potato Frittata

Ingredients

  • 1 can (14.5 oz.) Del Monte® Whole New Potatoes, drained and chopped
  • 1 can (15 oz.) Del Monte® Extra-Long Asparagus Spears, drained
  • 1 cup chopped onion
  • 1/2 tsp. basil
  • 2 tsp. oil
  • 1 cup diced cooked ham
  • 1 cup shredded swiss cheese
  • 4 eggs

Cooking Directions

1. Cook onion and basil in oil in 10-inch skillet until tender. Add ham and potatoes; cook 2 minutes.
2. Arrange asparagus on top and sprinkle with cheese.
3. Mix eggs with 1/4 cup water. Pour into skillet. Cover and cook on medium heat, 6 minutes. Uncover and cook 5 minutes or until set. Cut into wedges.
