Chuck Wagon BBQ Chicken Pasta Salad

Ingredients
- 4 oz. wagon wheel pasta
- 1 (15oz.) can garbanzo beans rinsed and drained
- 1/3 cup each chopped red & green pepper
- 8 oz. smoked turkey breast, cubed
- 1/4 cup pine nuts, toasted
- 4 oz. ea. mozzarella, cheddar, cubed
- 1 sm. red onion, sliced in thin rings
- 3 Tbs sliced, pitted black olives
- 1/3 cup BBQ sauce
- 3 Tbs Dijon mustard
- 1 head lettuce

Preparation
Step 1
Cook pasta till al dente. Rinse & drain. Combine beans, peppers, turkey, cheeses, olives, and onion in large bowl. Whisk together BBQ sauce and mustard in small bowl. Add to turkey mixture. Add pasta and toss to combine. Cover and refrigerate 2-24 hours. Serve over lettuce leaves. Top with pine nuts.
