French Mashed Potatoes

Ingredients
- 2 lbs Yukon Gold potatoes, peeled, cut into 1/2 inch slices
- Table salt
- 6 tablespoons unsalted butter
- 2 garlic cloves, minced or pressed
- 1-1.5 cups of whole milk
- 4 oz mozzarella cheese, shredded
- 4 oz Gruyere cheese, shredded
- Coarse black pepper

Preparation
Step 1
1. Place potatoes in saucepan with water and a pinch of salt. Boil until tender, 12-17 minutes, then drain.
2. Place potatoes in a food processor with butter, garlic, and 1.5 teaspoons of salt. Pulse until butter is melted and incorporated into the potatoes. Add 1 cup of milk and continue to process until potatoes are smooth and creamy, about 20s.
3. Return potato mixture to saucepan on medium heat. Stir in cheeses, 1 cup at a time until incorporated. Stir and cook for 3-5 minutes, adding milk a bit at a time if it is too thick to stir.
