Caramel Corn

Ingredients

  • 1/2 cups unpopped popcorn
  • 3/4 cup butter
  • 3/4 cups packed brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • Optional: (1 cup peanuts
  • 1 cup chopped pecans
  • 1 cup almonds)

Preparation

Step 1

Pop popcorn, I prefer by air popper, otherwise in pot with oil.
Melt butter in a medium saucepan, and then stir in brown sugar, syrup, and salt. Bring to a rolling boil, stirring constantly; boil without stirring for 5 minutes. Remove from heat.
Stir baking soda and vanilla (nuts are optional) into brown sugar mixture. Quickly pour caramel mixture over popcorn, and toss until well coated. Serve warm! Store airtight!
