FAUX FRIED ONION RINGS WITH SMOKEY MAYONNAISE

Ingredients

  • 4 Large Vidalia Onions cut 1/2 inch thick
  • 2 Cups Skim Milk
  • 2 Cups Whole Wheat Flour
  • 2 Cups Whole Wheat Panko Bread Crumbs
  • 4 Large Egg Whites
  • Salt abd Freshly Ground Pepper
  • Non-Stick Cooking Spray
  • 3/4 Cup Mayonnaise or Low Fat Mayonnaise
  • 1 Tbs Liquid Smoke

Preparation

Step 1

Separate onions. Use only large rings (20 rings total)
Lay in single layer i ectangular baking dish.
Pour milk over rings and soak 20 minutes turning once
Preheat oven to 425 deg. Place wire baking rack on 2 foil lined baking sheets. Set aside.
Put flour and panko bread crumbs in a shallow dish. Whip egg whites with whisk until foamy. Remove rings from milk, dregde in flour, shake off excess. Add rings to egg whites, toss to coat completely. Add to panko bread crumbs and coat completely. Spread out on wire racks. Season with salt and pepper and spray lightly with cooking spray.
Bake until Panko Bread Crumbs are golden brown, about 20 minutes.

Mix mayonnaise and liquid smoke (season to taste)
