Cook Yourself Thin Asian Chicken Salad

Ingredients

  • 1/4 c Mayonnaise
  • 1 tsp low sodium soy sauce
  • 1/2 tsp sesame oil
  • zest and juice of 1 lime
  • 1/2 red onion, chopped
  • 2 tbsp. cilantro, chopped
  • 1/2 tsp salt
  • 3 c roast chicken shredded
  • 8 oz. mixed greens salad
  • 2 tomatoes thinly slices (optional)
  • pita bread

Preparation

Step 1

1. In large bowl, add mayo, soy sauce, half the sesame oil, half the lime zest and juice, the onion, cilantro, salt, and pepper and mix well to combine.

2. Add chicken and coat evenly.

3. Assemble pita with greens and tomato and sprinkle remaining sesame oil and lime zest and juice over chicken.
