Ingredients
- 3-4 # Whole Chicken Washed & Dried
- 1/4 C Herbs de Provence
- 2 Cloves Garlic Minced
- 1/4 C EVOO
- 1 T Salt
- 1/2 t Pepper
- Lemon Wedges for Serving

Preparation
Step 1
Mix All Ingredients in Bowl, Rub on Chicken in/outside.
Place on Wire Rack in Roasting Pan, 475F Oven, Cook 25-30 Minutes Until Brown Skin.
Reduce to 350F, Cook 30 Minutes Until 165F Internal.
Remove & Let Rest 10 Minutes Before Carving.
Serve With Lemon Wedges.
