Pumpkin Mincemeat bars
- 1 3/4 cup unsifted flour
- 1/3 cup firmly packed brown sugar
- 1/3 cup granulated sugar
- 1 cup cold butter
- 1 cup chopped nuts
- 1 (27-oz) jar ready to use mincemeat
- 1 (15-oz) can pumpkin (2 cups)
- 1 (14-oz) sweetend condensed milk
- 2 eggs
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/2 tsp salt
Preheat oven to 425'. combine flour and sugars; cut in butter until crumbly. Stir in nuts. reserving 1 1/2 cups fo crumb mixture,press remaining crumb mixture on bottom and halfway up side of 13X9-inch baking dish.
Spoon mincemenat over crust. Combine remaining
ingreadients except reserved crumb mixture; mix well.
Pour over mincemeat and top with the reserved crumb
mixture. Bake 15 minutes; reduce overn to 350'. Bake
40 minutes longer or until goldern brown around the edges. Cool. Cut into squares. Refrigerate leftovers.
