Zucchini Sausage Casserole

Ingredients

  • 2 lbs. zucchini, ends trimmed
  • 1/4 cup chopped onion
  • 1 lb. hot or sweet sausage
  • 1/2 fine cracker crumbs
  • 2 eggs lightly beaten
  • 1/2 cup grated parmesan
  • pinch each of thyme, rosemary, garlic powder, salt and pepper

Step 1

Cook whole zucchini in boiling, salted water until tender, about 10 to 15 min. Drain and chop coarsely.

Brown onions and sausage in skillet. Drain off fat. Add zucchini and remaining ingredients (except 2T of cheese). Mix well and place in a casserole dish. Sprinkle with remaining cheese. Bake at 350 for 45 minutes. Casserole may be frozen before baking.
