  • fresh jalapenos (20)
  • 2-3 bricks of cream cheese
  • 2 cups shredded cheddar or mexican style cheese
  • fresh chives (chopped)
  • creole or cajun seasoning (to taste)
  • package of bacon



Step 1

1. Cut jalapeños in half - with spoon scrape out all of the white membrane and seeds
2. Mix together the cream cheese, shredded cheese, chopped chives, and creole/cajun seasoning with a hand mixer. Optional: fry two pieces of bacon, crumble when cooled and add bacon bits to the cream cheese mixture.
3. Cut the bacon pieces in half
4. Stuff each halved jalapeño with the cream cheese mixture
5. Wrap a half piece of bacon around each jalapeño. Secure with a toothpick
6. Bake at 375 degrees for 25 minutes (or until bacon is cooked)
