Ingredients

  • Soak flat rice noodles in warm water 20 mins.

  • Rice needles

  • 3

    cloves garlic

  • Olive oil

  • 2

    carrots

  • 5-6

    scallions

  • Squeezed drained crumbled tofu block

  • 1/4

    C Rice Vinegar

  • Lemon or lime juice

  • Cayenne pepper

  • Salt & Pepper to taste

  • 2

    tsp Paprika

  • 2

    Tbsp Brown sugar

  • Peanut butter

  • Peanuts - chopped for garnish

Directions

After soaking noodles for 20 mins in warm water, saute garlic, oil, rice vinegar,brown sugar,paprika,scallions,carrots,lime crumbled tofu, peanut butter and cayenne pepper to taste. Garnish servings with chopped peanuts.
