Ingredients

  • Soak flat rice noodles in warm water 20 mins.
  • Rice needles
  • 3 cloves garlic
  • Olive oil
  • 2 carrots
  • 5-6 scallions
  • Squeezed drained crumbled tofu block
  • 1/4 C Rice Vinegar
  • Lemon or lime juice
  • Cayenne pepper
  • Salt & Pepper to taste
  • 2 tsp Paprika
  • 2 Tbsp Brown sugar
  • Peanut butter
  • Peanuts - chopped for garnish

Preparation

Step 1

After soaking noodles for 20 mins in warm water, saute garlic, oil, rice vinegar,brown sugar,paprika,scallions,carrots,lime crumbled tofu, peanut butter and cayenne pepper to taste.
Garnish servings with chopped peanuts.
