Best-Ever Cowboy Cookies
- 2 cups old fashioned oats
- 2 cups flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/8 tsp cinnamon
- 1 cup unsalted butter- softened
- 1 cup packed light brown sugar
- 2/3 cup granulated sugar
- 2 Eggs
- 1 tsp vanilla
- 2 cups Choc chips
- 1 cup chopped nuts
- alternates- add coconut, white chocolate chips
in a large bowl, stir together oats, flour, baking soda, powder, salt, and cinnamon.
in mixer, blend butter and sugar until smooth, then add eggs (beat until fluffy), then add vanilla
Pour dry ingredients into mixer with other ingredients- then stir in nuts and chocolate chips.
-refrigerate for 1 hour- preheat oven at 350- if using pizza dish make sure to preheat with oven-
then shape dough into balls and place on cookie sheet/pizza stone 2 inches apart; flatten with finger tips
bake 14 minutes; until lightly browned.
cool on cookie sheet 2 min- then remove.
