Refried Bean Soup

  • 2 tsp. olive oil
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 2 tsp. minced garlic
  • 1 can chicken broth
  • 1 can mexican-style tomatoes
  • 1 can black beans
  • 1 can red kidney beans
  • 1 can refried beans
  • 1/4 tsp. ground cumin
  • black pepper



Step 1

Heat the oil in soup pot. Add the onions and peppers and cook until tender about 2-3 min. Add the garlic, broth and tomatoes. Rinse and drain the black and kidney beans and add. Stir in the refried beans, cumin and pepper. Stir well. Cover and let the soup come to a boil.
Reduce heat and simmer for 5-10 min or until ready to serve. Top with mexican cheese and sour cream if desired.
