Healthy-ish Spinach Artichoke Dip

Ingredients

  • 1 15.5oz can of artichoke hearts (packed in water, low salt if possible) drained
  • 12 oz spinach, kale or other green (fresh is best)
  • 1 small log goat cheese
  • 1/2 red onion
  • 2-3 cloves garlic
  • 1 container plain Greek yogurt (fage 2% worked well
  • 1 tbsp olive oil
  • Salt and pepper to taste

Step 1

Roughly chop garlic and onions and sauté with olive oil until tender. While onions and garlic are on the stove, add artichoke hearts to food processor. Process until smooth and add goat cheese. Process again until smooth and then move mixture to large mixing bowl. Process sautéed onions and garlic until smooth, then add to artichoke and goat cheese mixture. Wilt spinach or greens over medium heat. When wilted, add to food processor and pulse a few times to break up greens a little (based on desired consistency). Add spinach or greens to artichoke, cheese and onions. Fold in greens and then add Greek yogurt. May want to start with half and continue until desired consistency is reached. Season with salt and pepper. Store in refrigerator for an hour and let sit at room temperature 20 minutes before serving.
