Mini Apple Tartlets

This recipe reminds me of how my dad used to make homemade apple pie.

Ingredients

  • Crust
  • 1 cup flour
  • 1/3 cup confectioners sugar
  • 1/4 teaspoon salt
  • 6 tablespoons chilled unsalted butter
  • 1/4 cup creme fraiche
  • Filling
  • 2 Green Apples, cored and cut into 12 slices with skin on
  • 2 tablespoons butter
  • 1/4 cup sugar
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon freshly ground nutmeg

Preparation

Step 1

Crust
In a food processor blend the first 3 ingredients until well combined. Add chilled butter one tablespoon at a time until a course meal starts to form. Add creme fraiche. Blend until moist clumps start to form. Remove from the processor and form clumps into a ball. Flatten ball onto a sheet of parchment paper. Place another sheet of parchment paper on top of the ball and roll out until 1/4"- 1/2" thick. Refrigerate for at least an hour.

Filling
Preheat the oven to 400 degrees F. Heat butter in skillet over medium/low heat until butter is completely melted and evenly distributed on pan. Sprinkle sugar evenly into skillet. Heat until bubbles start to form. Add apple slices one side down all around pan until they fit snuggly into the pan. Sprinkle ginger, cinnamon and nutmeg evenly onto the apples. Turn heat to medium and cook for 20 minutes without stirring until syrup starts to turn amber.

Assembling
Remove the dough from the refrigerator. Using a 3" fluted cookie cutter, cut out 4 disks from the dough and transfer onto a baking sheet lined with parchment paper. Arrange the cooked apples onto the dough disks and cook for 25-30 minutes.

Serve with Honey-Vanilla Ice Cream.
