Barbecue Pork and Penne Skillet

Ingredients
- 1 package (16 ounces) penne pasta
- 1 cup chopped sweet red pepper
- 3/4 cup chopped onion
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 carton (18 ounces) refrigerated fully cooked barbecued shredded pork
- 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
- 1/2 cup beef broth
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon salt
- 1 1/4 cups shredded cheddar cheese
- 1/4 cup chopped green onions
Preparation
Step 1
Cook pasta according to package directions. Meanwhile, in a large skillet, saute red pepper and onion in butter and oil until tender. Add garlic; saute 1 minute longer. Stir in the pork, tomatoes, broth, cumin, pepper and salt; heat through.
Drain pasta. Add pasta and cheese to pork mixture. Sprinkle with green onions. Yield: 8 servings.

This recipe was amazing the only difference i did in making it was use regular onions as i did not have any green but i can not wait to try it with the green onions and green chills

I've been wanting to try this for awhile. I used my own leftover barbecued pork roast, which I cooked in the slow cooker yesterday. I did not use butter and did not have any peppers our would have used some. Used the whole can of beef broth (low sodium), added gradually for the pasta to absorb. I like the flavor of the cumin in the dish I also used medium whole wheat shells. I love this type of food...and especially new pasta dishes, but unfortunately such dishes are not my family's cup of tea. However, I enjoyed this for supper and will take it for my lunches this week. It does make a lot.
I made my own bbq pork as well and used the leftovers for this dish. Both my husband and I thought it was excellent and full of flavour.
Tried it last night for the first time. My kids werent thrilled because of the peppers but they are still young. Me and my husband thought it was delicious. We had the left overs for lunch. Super quick, cheap and easy to make.
I made my own pork bbq rather than use the (unhealthy) store-bought one. Good recipe.
I did a fresh pork roast with it didn't use the whole roast and using leftovers for pork bbq sandwichs and I also used spiral noodles this was delicious
The men in my house ate it in 2 days, which means it was a hit, made it with whole wheat pasta...yummy!!!
We really enjoy this one, and I don't usually change a thing. It does make a lot - which is nice when you don't want to cook the next day.
I made this yesterday, my wife and I love it. Wonderful flavor and texture. Good as a left over too.
It was ok. A little too much ground cumin for my taste and I didn't even use the full amount.
I tried this for my 18 year old son and his friends - they loved it. I used Rotel instead of the tomatoes and it added a nice extra bite :) It also made enough to fill them up!
This was fabulous. Had some kick but not too much! My husband and kids really liked it too!
Sorry, no one in the family liked this & it made a lot. Nothing special about it. I am going through each recipe in my magazine and trying them. Not a keeper.
I have made this several times, with store bought bbq pork and homemade, I love this recipe, fast and delicious. For those complaining about spice, use diced tomatoes without ANY green chilies which would help. Hopefully this review will let me pick 5 stars right now it is stuck on 3...
This recipe was DEELISH! Loved it. I did do some short cuts. I purchased a tub of premade pulled pork at my local grocery store for $4. Also, instead of red bell peppers, I used green. Since the prepackaged pulled pork had a enough sauce, I poured the entire can (juice and all) into the skillet and it thinned it out. We will definitely do this again because prep and cook time was a total of 15 minutes. Thank you, Mrs. Judy.
I made this awhile back, and it just didn't do anything for me. I wish I knew what went wrong so I could fix it, because I really wanted to love it. Sorry, it's just not for me.
This is a split decision. He thought it was good and I could not even eat all of mine. It was way too heavy on the BBQ flavor. I like BBQ but not this. He thought good. I thought poor. Split in the middle at fair, however, I will not make it again.
I found this recipe while searching top 10 recipe lists. It grabbed my attention because I just happened to have some left over pulled pork. Boy am I glad I did. It was delicious. It is just my fiance and I, so we had a good bit of leftovers. That was no problem though because we both loved it so much we ate it several days in a row. The second day it was a little dry so I added a big spoon of sour cream while heating. It changed the flavor just a bit, but still great.
Easy and delicious! Spicy, but not too hot. My family really loves this!!
This seemed to upset everyone's stomach at my house and I didn't even include the red pepper and green onions. I think the spiciness of the BBQ sauce that was in my pork, combined with the Ro-Tel, was overwhelming. I did like the concept of BBQ & pasta, though. I might try it again with a different flavor of BBQ, but it won't be any time soon.

I love to try new things but my hubby doesn't! But this went over great and now it is on the expanding list of what my husband likes. Even though I have a family of 6 there are leftovers.
My family loved it! My daughter especially. This is the second time I've made it, and she requested it. She works at a fast - food restaurant and wanted a home cooked meal. Paired it with a salad, delicious!
Hubby liked it, i didn't like the taste of the BBQ sauce that was in the BBQ pork that i used. Will look for a better tasting BBQ and try again, but the overall easy and taste of the recipe was good.

The refrigerated barbecued pork is already a staple in our house so finding another use for it was a plus! This recipe came together quickly and tastes delicious! I would have never thought to put the barbecued pork over pasta, but it works!
