Chocolate-Orange Nut Bars

"I like a sweet grab-and-go breakfast on occasion. Our version of these nut bars was inspired by an energy-bar recipe found on the website Mark's Daily Apple (www.marksdailyapple.com). Of course, they certainly make great snacks too."

Ingredients
- 1/2 cup almonds, toasted
- 1/2 cup pecans, toasted
- 1/2 cup shredded, unsweetened coconut, toasted
- 1/2 cup almond butter
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 1/2 tsp orange extract
- Zest of 1 orange
- 1 Tbsp honey
- 1 1/2 tsp pure vanilla extract
- 1/4 cup protein powder (optional)
- 1 ounce 80% dark chocolate, finely chopped (or 70%, if you prefer sweeter)
Preparation
Step 1
To toast your own nuts, heat them in the oven at 350*F until they're lightly browned and fragrant. Follow the same method for coconut, but reduce the cooking time.
Preheat oven to 325*F. Grease an 8-inch-square baking dish.
In a food processor, finely chop the nuts and coconut. Transfer to a medium bowl and mix in the almond butter and coconut oil.
In a separate smal bowl, beat the eggs with the orange extract, zest, honey, and vanilla. Add the egg mixture to the nut mixture and mix well. Stir in the protein powder, if you're using it.
Press the mixture into a prepared dish and top with the chopped chocolate. Bake for 15 minutes and cool before cutting into bars. Store covered for up to 3 to 4 days.
