Cucumber-Stuffed Cherry Tomatoes

This is a wonderful appetizer that you can make ahead. I often triple the recipe because they disappear fast. —Christi Martin, Elko, Nevada

Ingredients

  • 24 cherry tomatoes
  • 1 package (3 ounces) cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1/4 cup finely chopped peeled cucumber
  • 1 tablespoon finely chopped green onion
  • 2 teaspoons minced fresh dill

Preparation

Step 1

Cut a thin slice off the top of each tomato. Scoop out and discard pulp; invert tomatoes onto paper towels to drain.

In a small bowl, combine cream cheese and mayonnaise until smooth; stir in the cucumber, onion and dill. Spoon into tomatoes. Refrigerate until serving. Yield: 2 dozen.

The finished product was quite tasty; one of my guests asked to take the leftovers home with him. However, note that this is a time-consuming recipe. Use good-sized cherry tomatoes; I made the mistake of using grape tomatoes (what I had on hand) and although I was able to stuff them, it was a difficult task.

Here's a hint for scooping out the pulp-use a grapefruit spoon-the serrated edge works great-loved these and have made them a couple of times.

I have always loved the refreshing combination of tomatoes and cucumbers, so this one is a winner.

I'd like to address those concerned about the waste of time this recipe. 1) Use a "Tomato King" to scoop out the tomatoes .... available at Amazon.com. Obviously, this is not a dish you're going to rush home from work on any average day and fix for your family; However, it is something that you can make for a special occasion where appetizers are called for. Then, you should be preparing it out of love that you have for the family and friends you are preparing the dish for. That is when the joy and happiness really kicks in for all involved. Life is short, you have to cook, you might as well enjoy it!

These were a big hit at home so I am serving them for our family picnic. I am going to try chicken salad in them too. I also used the cherry tomatoes and the next size up from the cherry tomatoes.

These were a HIT at my Memorial Day party. Cleaning out the tomatoes was a little time consuming...but soooo worth it!!

Cherry tomatoes come in all sizes. I used the ones that are about the size of a ping pong ball (maybe slightly smaller). These were fantastic. Love the suggestions from some of the other posters!

This is an easy recipe. I didn't have fresh dill so I used dried dill & added it to the diced cucumbers - turned out fine. You do need to squeeze out any excess moisture from the cucumbers. The only suggestion would be to reduce the amount of mayo. I tasted it before adding the mayo and loved the taste. After the mayo was added I didn't get quite as strong a dill/cucumber taste. Will be making this again. Also would make a great dip for veggies or chips.

I made these for Memorial day and everyone loved them. I had a hard time stuffing til I used my Grandsons baby spoon. I also added a little bit of cooked bacon. Will definitely make again!

I used herb and chives cream cheese. Made recipe as is. Also, add fresh crabmeat to some of them. Both were excellent. I will made again many times with and without crabmeat. May try shrimp next time.

I just made these for a cookout and everyone thought they were great. I don't even eat raw tomatoes, but I really liked these. I did use more cucumber and onion than was called for. I definitely will take the time to make these again.

Have not tried the recipe yet can you use dry dill instead of fresh.

Yummy! If you lightly salt the cukes after chopping them, then let them sit in a colander for about 1/2 hour, then gently pressing on them most of the water will be removed. The filling won't be so thin.

Yum! I saw a saying on a sign in a kitchen shop once. It said, "Life is short, take time to stuff a cherry tomato!" Either you like to fuss with food, or you don't. Please don't put us down because we enjoy stuffing a cherry tomato! I won't question what you're doing with your time. This recipe is a double winner, adorable and yummy!

I cannot believe that anyone has soooo much time to spare / waste !! cherry tomatoes are soooo small !! I'll try using for salads / munching / in dips.

These were wonderful! I served these at a shower I was hosting and everyone loved them. They were easy enough to make and I could make them ahead of time. I will make these again!

VERY delicious, once people taste them they teke the recipe home and make more! Very simple and flavourful appetizer! I used herb/garlic cream cheese.

I'll have to try this recipe a 2nd time. I used a food processor to chop the cucumbers, and it caused the filling to be a bit runny. Next time I'll hand chop to see if it is any better.

these were sooo good! I added a little garlic powder. Took the advice and put the mixture in a zip lock bag and cut corner. I thought 24 would be too many - but they went fast!

I took them to a party and people loved them. I would recommend using a mini-processor to chop the cucumber. I shopped them by hand, but the pieces were still too big and got stuck in my largest frosting-tube tip.
