Sweet Potato Fries with Brown Marshmallow
- 3 large sweet potatoes cut into 1/2 inch wedges
- 1 Tbsp olive oil
- Salt and pepper
- 3/4 stick of butter
- 3/4 cup marshmallow topping
- 1/4 cup sour cream
- 1/4 cup crushed pecans (optional)
Preheat oven to 400. Spray baking sheet with spray. Place potatoes and oil with salt and pepper. Bake until golden brown about 40 minutes. Flipping over halfway.
In a saucepan heat butter, stirring for about 8 minutes. Pour into bowl and mix with marshmallow topping and sour cream. Then stir in the butter, salt and pepper to taste. Bring to room temperature before serving. Serve potatoes with warm sauce add pecans if desired.
