Ingredients
- 4 Tablespoons butter
- 1 onion, chopped
- 1 clove garlic, minced
- 3 pkgs. spinach, thawed and drained

- 4 Tablespoons butter
- 1 lb. mushrooms, sliced
- 3 Tablespoons flour
- 1 1/2 cups chicken broth
- 1/4 cup heavy cream
- 1/4 teaspoon nutmeg
- 4 Tablespoons lemon juice
- 2 1/2 cups cooked chicken
- 1 cup shredded swiss cheese, divided
Preparation
Step 1
In saucepan, melt butter; add onion and sauté. Add minced garlic. Mix with the drained spinach, and cook until hot. Place the mixture in the bottom of a pan (I assume that's a 9 x 13").
In a large skillet, melt butter and add mushrooms. Saute lightly. Stir in the flour, and add the chicken broth, cream, nutmeg, lemon juice, cooked chicken and mix well. Cook over medium heat until all is hot.
Pour the mushroom/chicken mixture over the spinach mixture, and sprinkle with the remaining cheese.
Put under the broiler until hot and the cheese has melted.
