Jess's Broccolli Potato Soup

  • 2 potatoes
  • 1/2 box vegetable stock
  • 3 garlic cloves
  • handful of parsley
  • 1 stock of broccoli
  • 1/2 onion
  • 1/4 C Nutritional Yeast
  • scallions and chopped smart bacon to garnish



Step 1

Boil potatoes. Sauté vegetables and garlic then purée them with potatoes in food processor. Add to stockpot with vegetable stock, salt and pepper and a little crushed red pepper and simmer while adding nutritional yeast. Soup should be thick but not dense in consistency.
Garnish with chopped fresh sautéed smart bacon and scallions.

Steam 1/2 head of cauliflower for 5-6 minutes and add to processor with with potatoes and veggies.
Add additonal vegetable stock as needed to stockpot.
