Ingredients

  • 1 8 oz. package reduced fat cream cheese
  • 1 c. sugar
  • 1/2 c. butter, softened
  • 1 3/4 c. flour
  • 2 eggs
  • 1/4 c. fat free milk
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 c. red raspberry jam

Preparation

Step 1

Grease a 9" x 13" baking pan. Preheat oven to 350.
In a large bowl combine cream cheese, sugar and butter; beat with an electric mixer on medium speed until smooth.
Add 3/4 c of the flour, eggs, milk, baking powder, baking soda, vanilla and salt.
Beat about 1 minute more or until combined.
Add the remaining 1 cup flour, beating on low speed just until combined.
Spread batter evenly in the prepared pan.
In a small bowl place jam and microwave for 10 sec. Stir until smooth.
Spoon jam in several mounds on top of batter.
Using a thin spatula or knife, swirl jam into batter.
Bake for 30-35 minutes.
Cool 30 minutes and dust with powdered sugar if desired.
