Ingredients

  • 2 cups four
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large (or 1 cup) mashed over-ripe bananas, peeled
  • 1 cup sugar
  • 2 eggs
  • 3 Tbs milk
  • 1 tsp vanilla
  • 1/2 cup butter, melted
  • 1/2 cup finely chopped nuts

Step 1

Spray 9" loaf pan with nonstick cooking spray and dust with flour. Preheat oven 300 degrees.
Sift four, baking soda, baking powder, and salt together in a large bowl. Set aside,

Cream bananas, sugar, eggs, milk and vanilla extract together in a large bowl with an electric mixer set on medium. Add sifted dry ingredients, alternately, with melted butter. Stir batter until ingredients are just combined. Stir in nuts by hand.

Turn out batter into prepared loaf pan. Bake for 20 minutes at 300 degrees, then turn up heat to 325 degrees and bake an additional 45-60 minutes, or until bread test done wit a cake tester. Take out and place on wire rack to cool. 364 calories per slice.
