Cabbage Roll Casserole

  • 1 large onion
  • 3 garlic cloves, minced
  • 1/2 head cabbage, about 7 cups sliced
  • 4 large carrots, thinly carrots
  • 2 large green peppers, seeded and chopped
  • 4 jalapeno peppers, seeded and finely chopped
  • 1 1/2 cups uncooked rice
  • 2 X 28 oz cans diced tomatoes including juice
  • 1/4 cup each brown sugar and white vinegar
  • 1 1/2 tsp each thyme and salt
  • 1 tsp Dijon mustard
  • 4-6 unpeeled tomatoes, chopped



Step 1

Preheat oven to 350F. Chop onions and place with garlic in bottom of large 4 litre casserole or 2 smaller dishes. Place peppers in large bowl with rice. In another bowl, stir tomatoes, sugar, vinegar, thyme salt and mustard. Stir into cabbage and carrots until evenly blended. Turn into casserole. Do not stir. Cover and bake 1 1/2 hours. Then, stir well every half hour. Stir in fresh tomatoes. Freeze in 2-4 cups portions.
