Hot Pepper Mustard

Makes 21 - 8oz. jars

Ingredients

  • 36 Hot peppers (yellow banana)
  • 1 tsp. salt
  • 6 cups sugar
  • 1 qt. cider vinegar
  • 1 qt. yellow mustard
  • 1 1/2 cups flour placed in 1 qt. jar, fill with water 3/4 from top and shake well to mix

Preparation

Step 1

Cut tops from peppers and place in food processor. Process on chop (seeds and all).

Combine chopped peppers, salt, sugar, vinegar and mustard in saucepan. Bring to a boil on medium high heat.

DO NOT ADD FLOUR MIXTURE UNTIL IT BOILS.

Stir until thickens and boils again. Fill heated jars and place in oven on rack at 200 for 35 minutes. Turn oven off and leave jars in oven until they are cooled (overnight).
