Portuguese Kale Soup

Ingredients
- 1/4 cup olive oil
- 1 large onion, diced
- 2 cloves garlic, peeled, crushed
- 1 pound chourico (Portuguese sausage), diced
- 6 medium potatoes, peeled and diced
- 8 cups chicken broth
- 1 pound kale, cut into very fine pieces (or 1 pkg frozen kale)
- 1 can (15 oz) red kidney beans, drained and rinsed
- salt and pepper to taste

Preparation
Step 1
In a large pot, heat the olive oil and sauté the onions, sausage, and garlic over medium heat. Do not allow garlic to brown, so add it last. Add the broth and simmer for 10 minutes. Add the potatoes, kale, and beans; bring to a boil, lower the heat and simmer for an additional 30 minutes. Season with salt and pepper.
