Ingredients
- 4 tablespoons butter or margarine
- 3/4 cup chopped onions
- 1/2 cup chopped red or green bell pepper
- 2 boiled or baked potatoes, peeled and sliced
- 6 eggs
- 2 tablespoons milk
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/3 cup grated Parmesan cheese (optional)
Preparation
Step 1
In a large skillet, heat butter over medium heat. When melted and bubbling lightly, add onions and peppers. Saute about 5 minutes until onions are softened. Add potatoes and saute about 10 minutes or until mixture starts to brown.
In a medium-sized bowl, beat eggs with milk, salt, and pepper.
Pour egg mixture into pan. Sprinkle with Parmesan cheese, if desired. Stir gently until eggs are set but not dry (about 8 to 10 minutes).
Serve immediately.
