Enchilada Sauce

Ingredients

  • 1 tsp canola oil
  • 1/2 C diced red onion
  • 1 tsp minced garlic
  • 1/2 C vegtable broth (such as Swansons)
  • 1 T chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1 280z can crusted tomatoes, undrained

Preparation

Step 1

Heat oil in large saucepan over medium heat. Add onion and garlic; saute 5 minutes or until onion is tender. Stir in broth and remaining ingredients. Reduce heat and simmer 30 minutes.
