Ingredients
- 1 tsp canola oil
- 1/2 C diced red onion
- 1 tsp minced garlic
- 1/2 C vegtable broth (such as Swansons)
- 1 T chili powder
- 1 tsp ground cumin
- 1/2 tsp salt
- 1 280z can crusted tomatoes, undrained
Preparation
Step 1
Heat oil in large saucepan over medium heat. Add onion and garlic; saute 5 minutes or until onion is tender. Stir in broth and remaining ingredients. Reduce heat and simmer 30 minutes.
Yield-3 cups
