Baked Stuffed Shrimp

Ingredients

  • 1/4 cup butter
  • 1/4 cup onion, chopped
  • 1 tbsp fresh lemon juice
  • 1 tbsp Old Bay Seasoning
  • 1 1/2 cup crushed Ritz crackers
  • 2/3 lb fresh jumbo shrimp, peeled and de-veined
  • Parmesan cheese, grated

Preparation

Step 1

Saute onion, lemon juice and Old Bay Seasoning in butter, about 2 minutes. Remove from heat, add crackers and toss lightly. Stuffing should be buttery, but dry and flaky.

Butterfly the shrimp and spread open, lay shrimp in a ciruclar pattern in the bottom of a 10 inch pie or quiche pan.

Spread stffing on top of the shrimp. DO NOT pat down. Stuffing should be light and delicate. Sprinkle with parmesan cheese.

Bake in 350 degree F oven for approximately 20 minutes.

Do not overbake.
