APPLE STREUSEL SQUARES

Ingredients

  • 2 c all purpose flour
  • 1/4 c sugar
  • 1/4 tsp salt
  • 1/2 c plus 3 table butter
  • 2 pounds apples, peeled, cored and cut into 1/2 inch pieces
  • 1/2 c dark seedless raisins
  • 1/3 c packed light brown sugar
  • 1/2 tsp cinnamon
  • 1 tbsp cornstarch
  • 2 tbsp lemon juice

Step 1

Preheat oven to 375. Lightly grease sides of 13 x 9 baking pan.

Streusel topping: In med bowl, with hand, mix 3/4 c all purpose flour, 3/4 c pecans chopped, 1/3 c packed light brown sugar, 6 tbsp butter, slightly softened, 2 tsp vanilla and 3/4 tsp ground cinnamon until mixture comes together; shape into a ball

Crust: Into large bowl measure flour, sugar and salt. Cut 1/2 c cold butter into small bits. With fingertips, blend butter into flour mixture until mixture resembles fine crumbs; press evenly onto bottom of baking pan. Bake crust 15 to 20 min until golden, crust may crack slightly.

Meanwhile in 10 inch skillet over med heat, cook apples, raisins, brown sugar, cinnamon, and 3 tbsp butter 15 minutes, stirring occasionally until apples are tender. In cup, mix cornstarch and lemon juice. Stir lemon juice mixture into apple mixture until thickened, mixture will thicken almost immediately, remove from heat.

Spoon apple mixture over crust. Break topping into chunks and scatter over apple mixture

Bake 30 minutes or until streusel is browned. Cool completely in pan on wire rack. When cold, cut lengthwise into 3 strips, then cut each strip crosswise into 5 pieces,makes 15 squares.
