Irish Brown Bread

This recipe is from Food and Wine magazine, chef Cathal. It is a simple recipe, very hearty and complex tasting and dense. For a total Irish experience, use Kerrygold butter and some nice Irish cheeses.

Ingredients

  • 3 c whole wheat flour
  • 1 c flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/4 c buttermilk
  • 1 egg, lightly beaten

Step 1

Preheat oven to 375 degrees. Butter an 8x5 inch metal loaf pan. In a large bowl, whisk both flours with baking soda and salt. In a small bowl, whisk buttermilk with the egg; stir into the dry ingredients with a wooden spoon until a rough dough forms.
Transfer dough to a lightly floured work surface and knead until smooth. Form dough into a loaf and put it in the prepared pan. Bake for 50 min, until the bread has risen about 1/2 inch above the rim of the pan. Once unmolded, loaf should sound hollow when tapped on the bottom. Let cool to warm or room temp, then slice and serve.
