Snickerdoodles

Ingredients

  • Cinnamon Sugar:
  • 2 3/4 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (2 sticks) butter, at room temperature
  • 1 1/2 cups sugar
  • 2 eggs
  • 3 tbsp sugar
  • 1 tbsp ground cinnamon

Preparation

Step 1

Onto a sheet of waxed paper, sift together the flour, cream of tartar, baking soda and salt.

In a medium bowl, beat the butter with an electric mixer at medium speed until smooth and creamy, about 3 minutes. Gradually beat in the sugar until light and fluffy, about 3 minutes. Beat in the eggs until well blended. On low speed, beat in the flour mixture until well blended. Press the dough into a 1-inch-thick disk. Wrap in waxed paper and refrigerate until thoroughly chilled, about 3 hours.

To bake, preheat the oven to 375 F. Pick off pieces of the dough the size of a walnut, and with your palms roll into balls 1-inch in diameter. Roll in the Cinnamon Sugar to coat. Place 2 inches apart on an ungreased baking sheet. Bake until light brown but soft to the touch, about 8 to 10 minutes. Transfer to a wire rack to cool.
