Ingredients
- 2 1/4 cups all purpose Flour maybe a little less
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 6 tablespoons unsalted butter
- 2 large eggs
- 1 tablespoon grated lemon peel
- 1 1/2 tsp vanilla extract
- 1 cup dried sweetened cranberries
- 3/4 cup shelled unsalted pistachios
- 6 oz white choc. chopped
Preparation
Step 1
PRE-HEAT OVEN TO 325 and line 3 cokkies pans with parchment paper.
sift first 3 ingredients
then beat butter, and sugar in a large bowl blend well. beat in eggs one at a time.
Mix in lemon peel, vanilla
now add flour mixture just until blended
Stir in cranberries and nuts. dough will be sticky
turn dough out onto lightly floured surface divide in 1/2. Roll each half i to a 15 inch log. about 1 1/4 inch wide. place on baking sheets 3 inches apart.
Bake logs unti almost firm to touch but still pale. about 28 minutes. cool log on baking sheets 10 min.
CAREFULLY TRANFER LOGS TO CUTTING BOARD
With serrated knife and gentle sawing motions cut logs crosswise into 1/2 inch thick slices. place back on baking sheets and cook for another 9 minutes.
transfer cookies to racks and cool.
Melt with choc in baggies, cut hole in corner and drizzel cookies with melted choc. Enjoy.
