Ingredients

  • 2 lge apples, peeled, cored, cut into 1/2" rings
  • 1 Peeled
  • cored Pineapple " " " "
  • 3 tbsp. Brandy (divided)
  • 3 tbsp. Sugar "
  • 1 Egg
  • 2 Cups Ice Water
  • 1/2 tsp. Baking Soda
  • 2 1/4 Cups All-Purpose Flour
  • Oil for deep frying
  • Confectioners Sugar

Preparation

Step 1

Marinate Apples & Pineapple in 2 tbsps. each Brandy & Sugar
for 30 mins.
In mixing bowl, beat Egg with remaining Brandy & Sugar, ice water & baking Soda.
Stir in Flour with a fork.
Batter should be lumpy.
Set bowl of batter inside larger bowl of ice & water to keep well chilled.
Drain fruit, pat dry.
Dip a few pieces at a time in batter, drain slightly.
Slide gently into oil heated to 350 degrees.
Fry until golden. 2 or 3 minutes Remove with slotted spoon,
drain on paper towels.
Dust with confectioners sugar.
