Ingredients
- 1 1-1/2 pound flank steak
- Salt and freshly ground pepper
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh, finely chopped parsley
- 4 tablespoons butter
- 3 cloves garlic, peeled and crushed

Step 1
Heat butter and garlic in a small saucepan over medium-low heat. Cook until garlic is fragrant, about 5 minutes. Remove and discard garlic. Set aside.
Pat steak dry with paper towels, then season with salt and pepper. Heat a large cast-iron skillet over high heat. When pan begins to smoke, coat with oil, then add steak and sear until almost black, for about 4 minutes on each side for rare. Don't move until ready to turn or crust will break.
Transfer steak to a platter. Cover with foil to keep warm.
Cover the steak with the garlic butter. Cut across the grain into 1/4-inch slices. Spoon juices over steak and top with parsley.

The steak turned out tender and a taste you won't believe. You have to try it. It's a 10 on my scale.
This recipe is easy, but I almost caught my kitchen on fire. Be careful because the grease can splatter. The tast of the steak was well worth the momentary panic!
