COCONUT CREAM PIE

Ingredients

  • 2 Cups MILK
  • 1/4 Cup COCONUT
  • 1/2 Cup SUGAR
  • 1/4 Teaspoon SALT
  • 4 EGG YOLKS
  • 3 Tablespoons CORNSTARCH
  • 1/2 Cup SUGAR
  • 1 Tablespoon BUTTER
  • 1 Teaspoon VANILLA
  • 2 Drops ALMOND EXTRACT (Optional)

Preparation

Step 1

Place MILK, COCONUT, SUGAR and SALT in a double boiler and bring to near boiling point.
Mix EGG YOLKS, CORNSTARCH nad 1/2 Cup SUGAR.
Add EGG YOLK Mixture to COCONUT Mixture.
Boil unti thick.
Add BUTTER, VANILLA and ALMOND EXTRACT.
COOL and Fill in 9 inch Pie Shell.

Use EGG WHITES for Pie Topping.
