Sausage Jambalaya

Ingredients

  • 2 tablespoons Crisco® Pure Canola Oil
  • 3 to 4 cloves garlic, minced
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped celery
  • 1 pound smoked turkey sausage, sliced thin
  • 1 (14 1/2 oz.) can chopped tomatoes, undrained
  • 1 cup reduced sodium chicken or beef broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper, more or less to taste
  • 1 bay leaf
  • 1 cup uncooked rice
  • 1/2 cup chopped green onions

Preparation

Step 1


1. HEAT oil in large heavy saucepan over medium heat. Add garlic, onion, green pepper and celery. Cook 5 minutes, stirring often. Add sausage. Cook 3 minutes, stirring often.

2. ADD tomatoes with liquid, broth, salt, thyme, cayenne pepper and bay leaf. Bring to a simmer and cook 10 to 15 minutes, stirring often. Add salt and pepper to taste.

3. ADD rice, stir to mix well; bring to a boil. Lower heat to medium-low, stir well; cover. Cook about 20 to 25 minutes until rice is cooked, stirring often. Add green onion; fluff with a fork before serving.
