Orzo with Spinach

  • 1 1/4 cups orzo
  • 2 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 Tbs white balsamic vinegar
  • 3 cups chopped fresh spinach or baby spinach

Step 1

Cook orzo in boiling water according to package directions omitting oil. Reserve 1/4 cup cooking liquid and drain pasta in a colander.

Heat large skillet over medium-high heat. Add olive oil to pan; swirl to coat. Add orzo, salt, pepper and cook 1 minute, stirring constantly. Stir in vinegar and spinach. Cook for 2 minutes or until spinach wilts.
