Acorn Squash Bake

Ingredients
- 3 acorn squash
- 2 cups apple juice
- 6 tsp orange zest
- 6 tsp rolled oats
- 6 tsp raisins
- 3 tsp ground cinnamon
- 1 tsp ground nutmeg
Preparation
Step 1
1. Preheat oven to 375F
2. Cut the acorn in half and remove seeds. Place halves cut-side down in a small roasting pan. Pour the apple juice over the top and cover tightly.
3. Bake for about 40 mins. Remove from oven and turn squash cut-side up. Sprinkle each with 1 tsp zest, 1 tsp oats, 1 tsp raisins, 1/2 tsp cinnamon, and a dash of nutmeg.
4. Baste with reduced apple juice in the pan. Then cover and bake 10 mins longer. Serve.
