Ingredients

  • 1/2 cup 1/2 cup uncooked orzo (rice shaped pasta)
  • 1 cup 1 cup quartered grape tomatoes
  • 2 tsp 2 tsp olive oil
  • 1 tsp 1 tsp chopped fresh thyme
  • 1 tsp 1 tsp grated fresh lemon rind
  • 1 tsp 1 tsp fresh lemon juice
  • 1/4 tsp 1/4 tsp salt
  • 1/8 tsp 1/8 tsp freshly ground black pepper

Preparation

Step 1

Cook orzo according to package directions, omitting salt and fat. Drain and rinse with cold water; drain. Place orzo in a medium bowl; add tomatoes.

Combine oil and next 5 ingredients in a small bowl; stir with a whisk. Drizzle over orzo mixture, and toss gently coat. Serve immediately, or cover and chill. Serving size 1/2 cup
