Ingredients
- 1/2cup1/2 cup uncooked orzo (rice shaped pasta)
- 1cup1 cup quartered grape tomatoes
- 2tsp2 tsp olive oil
- 1tsp1 tsp chopped fresh thyme
- 1tsp1 tsp grated fresh lemon rind
- 1tsp1 tsp fresh lemon juice
- 1/4tsp1/4 tsp salt
- 1/8tsp1/8 tsp freshly ground black pepper

Preparation
Step 1
Cook orzo according to package directions, omitting salt and fat. Drain and rinse with cold water; drain. Place orzo in a medium bowl; add tomatoes.
Combine oil and next 5 ingredients in a small bowl; stir with a whisk. Drizzle over orzo mixture, and toss gently coat. Serve immediately, or cover and chill. Serving size 1/2 cup
